They can't find enough porcini at home, so each year planeloads of hungry Italians come to Finland to pick wild mushrooms. We don't mind, there are plenty for everyone.
Finnish food comes straight from the fields, lakes and forests. Salmon, whitefish and Arctic char. Duck and snow grouse. Reindeer and elk. blueberries, lingonberries and cloudberries. Wild and good - and good for you.

People wait expectantly for the new potatoes, new peas and new onions, for the strawberries and raspberries, for the beginning of crayfish season. If it rains a lot in May, people just shrug and say, "oh well, it will help the chanterelles grow."
